TURKEY LASAGNE
Tasty alternative to a rich dish. Serve with salad.
Ingredients:
1 lb. lean ground turkey 1 pkg. whole wheat lasagne noodles 1 small container part skim riccata cheese 1 8 oz. pkg. 2% mozzerella finely shredded cheese 2 12 oz cans of no sodium added petite diced tomatoes 1 12 oz can tomato sauce 1 cup fresh mushrooms (sliced) 1 small onion (chopped) 1 bell pepper (chopped) 3-6 cloves garlic (minced) 1 tablespoon italian herb mix salt & pepper to taste
Instructions:
Brown ground turkey. Cook noodles using box directions. Drain both and set aside. In a large sauce pan, combine garlic, onion, and 1 teaspoon of olive oil. Cook until onions are transparent. Add bell pepper and mushrooms. Cook 1 minute. Add tomaotes, sauce, herbs, salt and pepper. Simmer 15-20 minutes. Mix riccata and mozzerella in a small bowl, saving 1/2 cup of m\ozzerella back. In a 13x9 baking dish, layer noodles, sauce, noodles, sauce, cheese mix, noodle, sauce, cheese mix...untill all is used up. Sprinkle last of cheese on top. Cover and bake at 400 degrees for 15 minutes. Uncover and reduce temperature to 350 degrees and continue to bake for 35 more minutes.
